Chamomile
Matricaria chamomilla
A small daisy-family flower used for centuries as an evening infusion. Gentle, honeyed, and reliably calming.

What the research says
Chamomile is rich in apigenin, a flavonoid that binds to benzodiazepine receptors in the brain and is associated in several trials with reduced sleep latency and mild anxiolytic effect.
Brewing tip
Steep covered for 5–7 minutes. Uncovered, the aromatic oils escape with the steam.
